Meatballs

I made meatballs last night!  A friend had sent a jar of a locally made vodka sauce for us to try, and I had a request from son #1 for meatballs.  My recipe made a lot, so I par baked half and froze them for a future meal.

1.5 pounds ground beef
1 pound ground pork sausage
4 eggs
2 cups of panko
1 cup fresh spinach chopped
1 cup freshly grated parmesan cheese
4 garlic cloves minced
1 cup water
salt and pepper
oil for frying, or bake them


Beat the eggs, add the panko, spinach, cheese and garlic and mix well.  Add the meats and using your hands mix very well.  Roll into balls and fry in batches, or bake in a 350 oven until done.

To par bake the meatballs like I did, I bake them at 350 for 10 minutes, then freeze them.  I will cook them the rest of the way in sauce or fry them when I am ready to use them.
