Quiche

Last night we had quiche, YUM! I have a basic recipe that I use for quiche, and then i add whatever sounds yummy to it.  I can't eat a lot of it, but it's worth whatever i can sneak in.  I also use dairy free cheese sometimes when i can or silken tofu.

1 pre-baked pie shell (i make mine and bake it for 10 mins at 350', don't forget the pie weights)

4 eggs
2 cups milk
6 oz shredded cheese ( I use a combo of swiss and Monterey Jack or Cheddar)
1 Tbl. flour
1/4 tsp salt 
1/8 tsp pepper
1 medium onion sliced (can be omitted, but adds great flavor)

Bonus items such as bacon, mushrooms, asparagus, ham, cooked chicken, broccoli

Saute onion until soft and lightly browned, dump into cooked pie shell.  Add other bonus items to pie shell spreading over bottom.  Last night i used cut up cooked bacon and COOKED mushrooms (any veggie you may add will need to be steamed  before had to release the water so you don't end up with watery quiche)  beat eggs and add milk, mix well and add salt and pepper.  In separate bowl mix shredded cheese with flour and then spread cheese mixture over bonus items in pie crust.  Pour egg mixture into pie plate and bake in a 350' oven for 1 hour or until pie is firm in the center and browned on top.  Let sit for 10 minutes before slicing.  


We had Bacon and mushroom quiche last night with steamed broccoli!  We ate the entire thing! Good thing i made two! But Albe has been spitting up horribly this morning, so i guess i wont be eating any of the second one.
