I save a ton of money every year freezing veggies when they are cheep, fresh and local in the summer! I always blanch green beans and freeze them in 1 quart zip lock freezer bags for veggies with a meal or an addition to soups or stews. Then they only have to be cooked quickly and remain crisp.
I also freeze corn when it is at its sweetest. I always buy and cook a dozen ears and cut off the cob whatever we don't eat in a meal and freeze it in the same way i freeze the beans. It is easy to open a frozen bag and dump the contents into my soup or pan, and it is so inexpensive and yummy.
